Honey is a healthy, entirely natural food, which has been treasured by people the world over from the earliest times. Its production does not impoverish the environment, but actually enriches it, as bees pollinate the flowers they visit.

Honey is produced by bees from the nectar secreted by flowering plants. The flavour of a particular honey is determined by the source of the nectar and no two honeys are identical. For instance oil seed rape yields a pale coloured mild flavoured honey whereas heather honey is usually darker and stronger in flavour. Between these there are a whole range of different flavours derived from the flowers, trees, plants and herbs
 
Honey also contains various minerals and enzymes. To date over 180 different substances have been identified in honey, some not known to exist elsewhere. Honey is normally sold in liquid or set (granulated) form. Granulation is the natural process by which honey changes from the liquid to the set state. It can be kept and stored for long periods of time.
